A Peek at the Trillium Haven Menu
Opening today (7/7/2012) in the Eastown area of Grand Rapids, is the first Michigan Farm to Table restaurant where the owners run the farm - and the table. It's Trillium Haven Restaurant. Anja Mast and Michael VanderBerg have been well-known in the area for growing and raising quality food since 2001 at their Trillium Haven Farm. According to a recent MLive article, the restaurant will be open for dinner Tuesday through Saturday, and a lunch service and Sunday brunch will be added later in the month.
I stopped by this afternoon for a peek at the menu which was still receiving the finishing touches. I spoke with Ann and Jeff, two friendly and knowledgeable members of the staff. All of the ingredients for the menu items are from local and/or small family farms – including meats, eggs, and vegetables from Trillium Haven Farm.
The menu included meatloaf, chicken and biscuits, lasagna (house-made pasta) and a tofu dish (Traverse City, MI tofu). The staff is sensitive to those with food allergies and there are several gluten-free options. The house-made pesto is dairy free and nut free. There is a baby food menu (yes, really) as well as a children’s menu that features pizza and pasta.
The non-alcoholic beverages are from small, non-Michigan producers: Boylan’s Craft Soda and Barrits Ginger Beer.
The Michigan beers served are from Bell’s, Brewery Vivant, Dark Horse, Founders, and Shorts. Also served is Ann Arbor’s Unity Vibration kombucha beer. The ciders are from Uncle John’s and JK Scrumpy. They serve spirits from New Holland. And, the Michigan wines are from Chateau Fontaine, Mawby, Shady Lane, and Two Lads.
