Fried Green Tomatoes

The fabulous red tomatoes are fading into fond memories, but the markets are still selling green tomatoes. They are tart, firm, and perfect for making fried green tomatoes. Here is my family recipe.

3 large green tomatoes
2 eggs
Small amount of water or milk
½ cup bread crumbs
½ cup cornmeal
½ teaspoon of each: dried oregano, dried basil, garlic powder, onion powder
Salt and pepper to taste
Oil for frying

1. Slice the tomatoes.
2. Make an egg wash by beating the eggs with a small amount of water or milk.
3. Mix together the bread crumbs, cornmeal, oregano, basil, garlic powder, onion powder, salt and pepper.
4. Heat 1/8 – ¼ inch of oil over medium heat.
5. Dip the slices into the egg wash and then the breading
6. Fry until browned on both sides.
